Pappardelle with wild mushrooms and thyme
Ingredients
- Olive Oil 1 tablespoon
- Sausages 10 oz
- Onion 1 head
- Garlic 1 clove
- Fresh Mushrooms 20 oz
- Chopped Sage Leaves 2 tablespoons
- Coarse Salt to taste
- Ground Black Pepper to taste
- Red Long Chili Peppers 2 pieces
- Paccheri Pasta 20 oz
- Butter 4 tablespoons
- Chopped Sage Leaves ½ cup
- Grated Pecorino Pepato Cheese 0 oz
Step-by-Step Guide
Step 1
Heat a large skillet with olive oil over medium heat. Remove the casing from the sausages. Add the sausage meat to the skillet along with the finely chopped onion and minced garlic. Sauté until browned, breaking up large clumps with a spoon, for about 7 minutes.
Step 2
Add the chopped mushrooms, thyme, and broken chili peppers. Cook, stirring, until most of the liquid has evaporated, about 10–12 minutes. Remove from heat, season with salt and pepper.
Step 3
Meanwhile, boil the pasta in salted water until al dente. Drain, reserving ½ cup of the water. Return the pasta to the pot.
Step 4
Add the butter and mushrooms to the pasta. Pour in a little of the reserved pasta water and toss to combine. Garnish with parsley and cheese and serve.
