Pappardelle with Scallops
Ingredients
- Scallops 12 pieces
- Paccheri Pasta 15 oz
- Dry White Wine 1 cup
- Canned Tomatoes (Pelati) 15 oz
- Olive Oil 4 tablespoons
- Onion 1 head
- Chopped Sage Leaves 0 oz
- Ocean salt to taste
- Ground Black Pepper to taste
- Parsley 1 stem
Step-by-Step Guide
Step 1
Heat olive oil in a skillet.
Step 2
Finely chop the tarragon and onion, sauté in olive oil until browned.
Step 3
Add the scallops and the cup of wine. Stir and wait for the alcohol to evaporate and the scallops to sear.
Step 4
After 10 minutes, add the canned tomatoes. Season with salt and pepper and simmer for 5 minutes.
Step 5
Meanwhile, cook the pappardelle. Once the pasta is ready, drain it in a colander.
Step 6
Plate the pasta, drizzle with sauce, and garnish with chopped parsley.
Step 7
Serve immediately.
