Pappardelle alla Boscaiola is a rustic pasta dish made with broad, flat noodles and a rich sauce featuring mushrooms, sausage, and tomatoes. It's a comforting meal that brings the flavors of the forest to your table, perfect for a cozy dinner at home or to impress guests at a gathering.

Ingredients

  • Porcini Mushrooms 10 oz
  • Paccheri Pasta 15 oz
  • Shallot 2 heads
  • Baking Tomatoes 10 oz
  • Garlic 1 clove
  • Olive Oil 4 spoons
  • Dry White Wine 5 fl oz
  • Parsley 1 bunch
  • Rosemary 1 stalk
  • Chopped Sage Leaves 3 pieces
  • Grated Pecorino Pepato Cheese to taste
  • Salt to taste
  • Ground Black Pepper to taste

Step-by-Step Guide

Step 1

Clean the mushrooms to remove any dirt, slice the stems into thin pieces, and chop the caps into large cubes.

Step 2

Chop the shallots and sauté them in olive oil along with rosemary, sage, and parsley. After a few minutes, add the mushroom stems to the pan, and after a minute, pour in 120 ml of wine and the tomatoes, seasoning with pepper.

Step 3

Leave the sauce on a very low heat for half an hour. Then add a bit more wine, a little water, and the mushroom caps, and continue to cook on low heat until ready.

Step 4

Cook the pappardelle in boiling salted water. Toss the pasta with the sauce, sprinkle with grated cheese, and serve.
