Ingredients

  • Wheat Flour 1 cup
  • Milk 1½ cups
  • Scallions 5 oz
  • Salt to taste
  • Vegetable Oil to taste
  • Grated Pecorino Pepato Cheese 5 oz

Step-by-Step Guide

Step 1

Beat the eggs in a bowl with a pinch of salt. Gradually, while continuing to beat, pour in the milk and add the sifted flour in portions. Mix well to avoid lumps. Let the batter rest for about 5–10 minutes.

Step 2

Wash the green onions, dry them, finely chop, and add to the batter, mixing well.

Step 3

Heat 1 tablespoon of vegetable oil in a skillet, pour in a ladle of batter, and fry the pancake on both sides until golden brown. Remove the pancake and sprinkle with grated cheese, folding it in half. Continue this way, adding oil to the skillet as needed, to fry pancakes from the remaining batter.
