Oysters with three sauces
Ingredients
- Fresh Oysters 6 pieces
- Apple 5 oz
- Plums 0 oz
- Spanish onions 0 oz
- Oranges 20 oz
- Ginger 0 oz
- Garlic 1 clove
- Lime 5 oz
- Apple Cider Vinegar 5 fl oz
- Red Wine Vinegar 5 fl oz
- Maple syrup 0 fl oz
- Chili Flakes a pinch
- Salt to taste
Step-by-Step Guide
Step 1
Peel the apple and cut it into small cubes. Also, finely chop the plum, red onion, ginger, and garlic.
Step 2
Take three small saucepans. In one, squeeze the juice from the oranges and limes, add ginger and garlic, and heat it on the stove until it reduces to a thick consistency. Then, let it cool and stir in finely chopped cilantro.
Step 3
In a second saucepan, bring the wine vinegar to a boil with the onion, plum, and a splash of maple syrup. Remove from heat as soon as the sauce reaches a boil.
Step 4
In a third saucepan, place the apple, pour in the apple cider vinegar, add chili flakes, and a pinch of salt. Bring to a boil and then remove from heat.
Step 5
Open the oysters with a special knife and remove the top shell. Make sure no broken shell pieces get inside.
Step 6
Place the oysters on ice and pour sauce over each one. Serve immediately.
