Oysters with Apple-Pepper Sauce

Ingredients

  • Fresh Oysters 6 pieces
  • Cider 5 fl oz
  • Apple 1 piece
  • Shallot 1 head
  • Orange Bell Peppers ½ piece
  • Chopped Sage Leaves 1 tablespoon
  • Apple Cider Vinegar 1 tablespoon
  • Ground Black Pepper ¼ teaspoon

Step-by-Step Guide

Step 1

Clean the oysters thoroughly. Place the oysters in a pot, add the cider, and bring to a boil. Cover with a lid and cook on high heat until all the oysters open. Transfer to a plate (discard any that do not open). Chill for 30 minutes.

Step 2

Meanwhile, strain the liquid from the oysters and mix 2 tablespoons of this liquid with finely chopped apples, finely chopped pepper, finely chopped shallot, parsley, apple cider vinegar, black pepper, and salt.

Step 3

Remove the top shell from the oysters and place the bottom halves on plates. Serve the sauce separately.
