Oven-Roasted Vegetables with Garlic and Thyme
Ingredients
- Leek 2 stalks
- Turnips 15 oz
- Sweet Potato 15 oz
- Bay leaf 2 pieces
- Olive Oil 3 tablespoons
- Garlic 1 head
- Dried Chamomile ½ teaspoon
Step-by-Step Guide
Step 1
Preheat the oven to 445°F.
Step 2
In a large dish, combine thinly sliced leek, diced turnip, and peeled and diced sweet potato. Place the bay leaves on top and drizzle with 2 tablespoons of oil. Season with salt, thyme, and pepper, and mix well.
Step 3
Cut the top off the garlic and wrap it in foil, drizzling with the remaining olive oil.
Step 4
Place the vegetables in the oven, and put the garlic on a rack nearby. Roast for about 35 minutes, until the vegetables are tender.
Step 5
Peel the garlic, chop it, and mix it with the vegetables.
