Description
You can season the vegetables with salt or brush them with soy sauce mixed with honey, if desired.
Ingredients
- Courgette 2 pieces
- Eggplants 2 pieces
- Orange Bell Peppers 2 pieces
- Marinated cherries 10 oz
- Vegetable Oil to taste
Step-by-Step Guide
Step 1
Slice the zucchini and eggplant into 1 cm rounds, cut the bell pepper into wedges, and leave the cherry tomatoes whole.
Step 2
Arrange the vegetables on a baking sheet greased with oil.
Step 3
Place the baking sheet in a preheated oven at 200–430°F for 10 minutes.
Step 4
After 10 minutes, turn the vegetables and return them to the oven for another 5–10 minutes.
