Oven-Roasted Leeks and Asparagus

Ingredients

  • Leek 6 pieces
  • Asparagus 20 oz
  • Olive Oil 1 tablespoon
  • Coarse Salt to taste
  • Ground Black Pepper to taste
  • Balsamic Vinegar to taste

Step-by-Step Guide

Step 1

Trim the dark green leaves and roots from the leeks. Cut the remaining parts in half lengthwise and rinse under cold water, then dry.

Step 2

Preheat the oven to 390°F.

Step 3

Trim the ends of the asparagus.

Step 4

In a large bowl, combine the asparagus and leeks, drizzle with olive oil, season with salt and pepper. Mix well.

Step 5

Spread the vegetables in a baking dish and roast in the oven until tender and golden, about 25 minutes. Let cool slightly.

Step 6

Before serving, drizzle with balsamic vinegar if desired.
