Ingredients
- Orzo Pasta 15 oz
- Onion 5 oz
- Olive Oil 5 fl oz
- Carrot 5 oz
- Chicken Broth 20 fl oz
- Broccoli 20 oz
- Fresh basil leaves 0 oz
- Garlic 0 oz
- Pistachios 0 oz
- Salt to taste
- Ground Black Pepper to taste
Step-by-Step Guide
Step 1
First, prepare the broccoli pesto. Break the broccoli into florets, set aside, and finely chop the broccoli stem.
Step 2
Blanch the chopped stem in hot salted water until soft, then blend with half of the olive oil, finely chopped garlic, and basil leaves. The pesto is ready!
Step 3
Finely chop the onion and carrot, sauté them until soft in olive oil in a large skillet over low heat, then add the orzo, broccoli florets, and vegetable broth. Cook over medium heat for about 8 minutes, stirring constantly. Gradually evaporate the liquid until it reaches a risotto-like consistency.
Step 4
At the end, add the broccoli pesto, season with salt and pepper to taste.
Step 5
Serve in a deep plate and garnish with toasted pine nuts.
