Oregano and Hot Pepper Sauce
Ingredients
- Dried Oregano 5 oz
- Dried Red Pepper 5 oz
- Water 1 cup
- Chopped Parsley ½ cup
- Minced garlic 4 cloves
- Salt ½ teaspoon
- Olive Oil 0.7 cups
- Red Wine Vinegar to taste
Step-by-Step Guide
Step 1
Combine 1/3 of the dried oregano with 1 1/2 tablespoons of dried red pepper in a small bowl.
Step 2
Add 1 cup of warm water and mash the mixture with your hands. Let it steep until the oregano and pepper soften, about 15 minutes (the spices should absorb the water).
Step 3
Add ½ cup of parsley, 4 minced cloves of garlic, and ½ teaspoon of salt. Gradually stir in 2/3 cup (or more) of olive or sunflower oil; let it sit for at least 1 hour (up to 2 days).
Step 4
Add vinegar, garlic, salt, or oil to taste.
