Orecchiette with Tomatoes and Green Beans

A wonderful summer Italian dish made with orecchiette pasta, tomatoes, green beans, fresh basil, and pecorino cheese. This quick and delicious pasta recipe is adapted from a cookbook by Jamie Smith.
Ingredients
- Conchiglie Pasta 10 oz
- Onion 1 head
- Olive Oil 1 tablespoon
- Chinese green beans 15 oz
- Tomatoes 10 oz
- Fresh basil leaves 0 oz
- Grated Pecorino Pepato Cheese 0 oz
Step-by-Step Guide
Step 1
Peel and finely chop the onion and place it in a wide, shallow pan over medium heat with the oil.
Step 2
Stir occasionally for 3–4 minutes, then add the green beans and cook for 6 minutes.
Step 3
Cut the tomatoes into rough 1 cm cubes, add them to the pan. Season with sea salt and black pepper, then chop the basil leaves.
Step 4
Meanwhile, cook the orecchiette in boiling salted water according to the package instructions.
Step 5
Add the pasta to the sauce and mix, adding pasta cooking water if necessary. Grate the cheese finely and mix again.
