Orecchiette pasta with Italian sausages and roasted peppers
Ingredients
- Orange Bell Peppers 2 pieces
- Coarse Salt to taste

- Conchiglie Pasta 20 oz
- Olive Oil 2 teaspoons
- Sausages 20 oz
- Butter 1 tablespoon
- Grated Pecorino Pepato Cheese 0 oz
Step-by-Step Guide
Step 1
Preheat the grill in the oven.
Step 2
Cut the peppers lengthwise into 4 pieces and remove the seeds and membranes. Place them on a baking sheet lined with foil, skin side up, and grill for about 15–18 minutes, until the skins are charred. Transfer to a bowl and cover with foil. Let sit for a while and peel off the skins. Cut into thin strips and transfer to a bowl.
Step 3
Meanwhile, in a pot of boiling salted water, cook the pasta until al dente. Drain, reserving 0.5 cup of the water.
Step 4
Heat the olive oil in a skillet over medium heat. Add the sausage meat, broken into pieces. Sauté until golden brown for 7–10 minutes. Add the peppers and warm slightly.
Step 5
Transfer the sausage mixture with the peppers to a bowl, add the pasta, butter, reserved water, and Parmesan. Season with salt and pepper. Serve immediately.
