
Orange Mayonnaise with Shallots

Ingredients
- Oranges 2 pieces
- Shallot 1 head
- Mayonnaise 6 tablespoons
- Meyer Lemon Juice ½ teaspoon
- Ground Black Pepper a pinch
Step-by-Step Guide
Step 1
Grate 1 teaspoon of zest from the oranges and squeeze out 5 tablespoons of orange juice.
Step 2
In a small saucepan, combine 4 tablespoons of orange juice and finely chopped shallot. Place over medium heat and bring to a boil, stirring, and cook for 4-5 minutes until the juice reduces slightly.
Step 3
Transfer to a bowl and cool.
Step 4
Then add the mayonnaise, zest, lemon juice, pepper, and remaining orange juice. Cover and refrigerate for 1 hour.
