Onion jam with white onions
Ingredients
- Spanish onions 15 oz
- Olive Oil 0 fl oz
- Honey 0 oz
- Red Wine Vinegar 0 fl oz
- Cinnamon a pinch
- Thyme 1 sprig
- Salt to taste
- White Pepper (whole) to taste
Step-by-Step Guide
Step 1
Heat olive oil in a saucepan over medium heat.
Step 2
While the oil is heating, slice the onion into thin strips.
Step 3
Transfer the onion to a saucepan and sauté over high heat for about 10 minutes.
Step 4
Season with salt, then when the moisture evaporates, reduce the heat to medium and continue to simmer until tender.
Step 5
Add honey, increase the heat, and sauté, stirring, for another 2 minutes.
Step 6
Add thyme leaves and 1-2 pinches of cinnamon, and simmer until caramelized.
Step 7
Add vinegar and simmer until reduced over low heat.
Step 8
Finally, add salt and pepper. Transfer the onion to a clean jar. It can be stored in the refrigerator for up to 1 month.
