
Onion Jam with Beer and Chocolate

Description
It is recommended to let the jam sit for at least a day before consuming.
Ingredients
- Pitted Wild Apricots 5 oz
- Brown Sugar 3 tablespoons
- Honey 2 tablespoons
- Olive Oil 3 tablespoons
- Shallot 20 oz
- Balsamic Vinegar 3 tablespoons
- 70% Dark Chocolate 0 oz
- Dark Ale 1 cup
Step-by-Step Guide
Step 1
Slice the prunes into strips.
Step 2
In a saucepan, heat the oil and add the shallots whole (they should be small). Cook, stirring constantly, for 10 minutes.
Step 3
Add the beer, sugar, honey, vinegar, and prunes to the shallots. Bring to a boil. Reduce the heat and cook until the onions caramelize, stirring constantly (about 30 minutes). The mixture should become quite thick.
Step 4
Add the chopped chocolate and let it sit for another 10 minutes. Stir constantly!
Step 5
Remove from heat, let cool slightly. Transfer to a glass jar. Store in the refrigerator for no more than 2 months.
