  • Onion 30 oz
  • Butter 4 tablespoons
  • Ground clove ¾ teaspoon
  • Ground Caraway ½ teaspoon
  • Ocean salt to taste
  • Whole egg 2 pieces
  • 33% Cream ¼ cup
  • Grated Pecorino Pepato Cheese 0 oz

Step-by-Step Guide

Step 1

Cut the onion in half lengthwise. Place cut side down on a board and slice very thinly.

Step 2

In a large deep skillet, combine the butter, cloves, onion, caraway, and salt. Cover and cook on very low heat for 10 minutes until the onion becomes soft. Season with salt and pepper.

Step 3

Transfer the onion mixture to a baking dish and smooth it out with a spoon.

Step 4

Preheat the broiler in the oven. In a small bowl, whisk the egg yolks with the cream, then stir in the cheese and pour the mixture over the onion. Place under the broiler for about 1-2 minutes until a golden crust forms on top. Serve immediately.
