
Omelette with Wild Garlic, Cod Caviar, and Vodka

One of our favorite recipes that made it into the editorial thanks to a chef and restaurateur from New York.
Ingredients
- Chicken Egg 4 pieces
- Ramsons 5 oz
- 33% Cream 0 fl oz
- Vodka 0 fl oz
- Cod roe 2 spoons
- Vegetable Oil 2 spoons
- Ground Black Pepper to taste
- Salt to taste
Step-by-Step Guide
Step 1
Crack the eggs into a bowl.
Step 2
Add the cream, salt, pepper, and vodka. Whisk the egg mixture.
Step 3
Add the caviar and continue whisking to incorporate it thoroughly into the mixture.
Step 4
Chop the ramps coarsely. Sauté quickly in vegetable oil for 1–2 minutes. Season with salt and pepper.
Step 5
Pour the egg mixture over the ramps. Cook for 3–4 minutes, stirring occasionally to keep the omelet juicy.
Step 6
Fold the omelette in half and serve, garnished with wild garlic.
