Step-by-Step Guide

Step 1

Melt 35 grams of butter in a skillet, then add finely chopped onion, a tablespoon of sugar, and a pinch of salt. Pour in enough water to cover the onion, and leave it on high heat. Once the water evaporates and the onion begins to brown slightly, splash in a bit more water and quickly stir to ensure the caramel forms evenly over all the pieces.

Step 2

Crack the eggs into a bowl. Add a pinch of nutmeg, a pinch of salt, one-third of the cream, and lightly mix.

Step 3

Pour the remaining cream into a saucepan and place it over heat. Add a little nutmeg and let it boil until the cream thickens. At the end, add a pinch of finely chopped green onions, season with salt to taste, and stir.

Step 4

Melt the remaining butter in a skillet. Pour in the eggs and stir while cooking until the bottom of the omelet is browned but the top remains slightly runny. Place the caramelized onions in the center, then fold two opposite edges of the omelet to form an envelope. Transfer the envelope to a plate and drizzle with creamy sauce.
