Omelet with Zucchini, Green Onions, and Feta Cheese
Ingredients
- Olive Oil 1 tablespoon
- Young zucchini ½ piece
- Chocolate eggs 4 pieces
- Salt a pinch
- Ground Black Pepper to taste
- Chopped Green Onions 1 tablespoon
- Feta cheese 0 oz
- Grated Pecorino Pepato Cheese 0 oz
Step-by-Step Guide
Step 1
Boil salted water. Using a vegetable peeler, cut the zucchini into thin long strips, place them in a colander or sieve, and immerse in boiling water for 5 minutes.
Step 2
Heat olive oil in a skillet.
Step 3
Crack the eggs into a bowl, pierce the yolks with a fork, add salt and pepper, and quickly and vigorously mix the whites with the yolks using horizontal movements.
Step 4
Add the onions and 1 tablespoon of cold water to the eggs, mix quickly again, and pour into the hot skillet.
Step 5
Remove the colander with zucchini from the broth and let it drain.
Step 6
Using a small spatula or fork, gently push the set edges towards the center without breaking the overall shape. Reduce the heat to medium.
Step 7
When the omelet is still liquid only on the surface, carefully place the zucchini strips on top and cover with a lid. Leave for 2–4 minutes.
Step 8
Sprinkle the finished omelet with crumbled feta and Parmesan.
