Ingredients
- Chicken Egg 3 pieces
- Italian chopped parsley 1 teaspoon
- Lemon-Pepper Mix to taste
- Ocean salt to taste
- Marinated cherries 5 oz
- Arugula to taste
- Avocado ½ piece
- Pea shoots to taste
- Olive Oil 1 tablespoon
- Ricotta cheese 2 tablespoons
- Toasted Sesame a pinch
- Chili Flakes a pinch
- Lemon 1 piece
- Chili jam 1 tablespoon
Step-by-Step Guide
Step 1
Crack the eggs into a deep bowl, season with salt and pepper.
Step 2
Add the Italian herb mix.
Step 3
Add 1 tablespoon of ricotta.
Step 4
Cut the cherry tomatoes in half and season with salt.
Step 5
In a heated skillet, add the tomatoes and sauté for 3 minutes over medium heat, then stir.
Step 6
Pour in the egg mixture. Increase the heat and cook for another 2–3 minutes.
Step 7
Peel and slice the avocado. Drizzle with lemon juice.
Step 8
Cover with a lid and cook for about 5 more minutes on low heat.
Step 9
Place arugula sprigs and a spoonful of ricotta on a plate. Lay the omelet next to it.
Step 10
Top the arugula with avocado, add sesame seeds and chili flakes.
Step 11
Drizzle the omelet with chili sauce and serve.
