Ingredients
- Butter 1 tablespoon
- Onion 1 head
- Garlic 1 clove
- Chopped Sage Leaves ½ tablespoon
- Butternut Squash 5 oz
- Goat cheese ¼ cup
- Egg white 2 pieces
Step-by-Step Guide
Step 1
Melt the butter in a skillet and add the thinly sliced onion. Cook for 20-30 minutes until the onion begins to caramelize. Add the finely chopped garlic and sage and cook for another minute.
Step 2
Add the peeled and diced butternut squash and cook until tender for 5-8 minutes.
Step 3
Reduce the heat, sprinkle with crumbled gorgonzola, and let it melt slightly.
Step 4
Pour in the lightly beaten eggs and cook without stirring for 2-4 minutes until set.
Step 5
Cut into segments, sprinkle with fresh sage, and serve.
