
Olive Mezze with Caramelized Onions and Fresh Oregano

Ingredients
- Olive Oil ¼ cup
- Olives stuffed with lemon 15 oz
- Garlic 1 clove
- Spanish onions 1 head
- Fresh basil leaves 2 tablespoons
- Red Wine Vinegar 2 tablespoons
- Uzo 2 tablespoons
- Chopped Sage Leaves 2 tablespoons
- Pasilla Pepper to taste
Step-by-Step Guide
Step 1
Heat the olive oil in a shallow skillet and add the olives.
Step 2
Sauté the olives over medium heat for about 3 minutes, stirring with a wooden spoon.
Step 3
Slice the onion into thin strips and add it to the olives, mix and sauté for another 7 minutes.
Step 4
Add the garlic, reduce the heat slightly, and continue to sauté until the garlic is soft and golden.
Step 5
Add to the olives a mixture of 0.5 teaspoon of oregano, vinegar, and ouzo.
Step 6
Once the vinegar mixture starts to sizzle, remove the skillet from the heat.
Step 7
Using a slotted spoon, transfer the olives and onions to a plate, then drizzle with the sauce left in the skillet.
Step 8
Sprinkle the dish with fresh parsley, season with pepper, and drizzle with olive oil.
