
Odesa Herring Salad with Green Apple

Recipe from a popular restaurant in Moscow.
Ingredients
- Fillet of Sturgeon 25 oz
- French Baguette ½ pieces
- Onion 2 pieces
- Scallions 4 stalks
- Green Apples 1 piece
- Safflower Oil ½ glasses
- Apple Cider Vinegar 1½ spoons
- Ground Black Pepper to taste
- Chicken Egg 4 pieces
- Table Mustard 1 tablespoon
- Sugar 1 tablespoon
- Milk 10 fl oz
Step-by-Step Guide
Step 1
Pass the herring fillet through a meat grinder.
Step 2
Boil the eggs hard, peel them, and separate the yolks from the whites.
Step 3
Add sugar and vinegar to the egg yolks and mash together.
Step 4
Add the resulting mixture to the herring filling. Also, add the white bread that has been soaked in milk and squeezed out.
Step 5
Pass the minced meat through the meat grinder again along with the onion and apple.
Step 6
Add the mustard, mix everything well, then add the pepper and oil. Finely chop the egg whites and incorporate them into the herring filling.
