Ingredients
- Chopped almonds 5 oz
- Walnuts 5 oz
- Anchovy fillet 4 pieces
- Garlic 2 cloves
- Chopped Sage Leaves 5 oz
- Chopped Sage Leaves 0 oz
- Grated Pecorino Pepato Cheese 0 oz
- Olive Oil ¾ cup
- White Balsamic Cream 1 tablespoon
Step-by-Step Guide
Step 1
Toast the walnuts and peeled almonds. Place the walnuts in a towel and rub them together to remove the skins.
Step 2
Add the peeled nuts to a blender with the anchovies, garlic, herbs, and cheese. Season to taste and blend. With the blender running, gradually add the olive oil in a thin stream. Finally, add the vinegar and taste — you may need to add more salt to taste.
Step 3
Serve with roasted meat or cheeses.
