Norwegian Salmon Rolls with Spinach
Ingredients
- Spinach 1 bunch
- Coho salmon fillet 20 oz
- Chicken Egg 1 piece
- Cream (40%) 0 fl oz
Step-by-Step Guide
Step 1
Blanch the spinach and place it on ice. On a sheet of plastic wrap (size 15 x 20 cm), lay out thin slices of salmon and cover with spinach leaves.
Step 2
For the mousse: blend the salmon fillet, cream, and egg in a blender until a paste-like consistency is achieved. Spread the mousse over the spinach.
Step 3
Roll up the rolls, tie the ends of the wrap, and poach in very gently simmering water. Place on a tray, cool, and cut.
Step 4
Before serving, garnish the dish with lettuce leaves, herbs, lemon, and vegetables.
