Noodles with Pepper and Sweet Potato

Ingredients

  • Sweet Potato 1 piece
  • Sesame Oil 1 tablespoon
  • Sweet Onion 1 head
  • Fresh Red Pepper 1 piece
  • Fresh Yellow Pepper 1 piece
  • Minced garlic 3 cloves
  • Ground Cumin 1½ teaspoons
  • Ground coriander 1 teaspoon
  • Aleppo pepper ½ teaspoon
  • Canned tomatoes 30 oz
  • Udon Noodles 10 oz
  • Chopped Cilantro ½ cup

Step-by-Step Guide

Step 1

Place the sweet potato in a microwave-safe bowl and cover with plastic wrap.

Step 2

Microwave on high for 4 minutes.

Step 3

Heat the oil in a large pot over medium-high heat, add the onion and peppers, and cook for 2-3 minutes until the vegetables are slightly softened.

Step 4

Add the garlic, cumin, coriander, and Aleppo pepper, and cook for another minute.

Step 5

Add the sweet potato, tomatoes, and pour in ½ cup of water.

Step 6

Cover with a lid, bring to a boil, then reduce the heat to medium.

Step 7

Remove the lid and simmer for 10-12 minutes until the sweet potato is tender.

Step 8

Mix with the noodles, season with salt and pepper to taste. Before serving, sprinkle with cilantro.
