Noodle and Ham Casserole (Schinkenfleckerln)
Breakfasts • Austrian
Description
Noodle casserole is by no means a strange dish: Ashkenazi kugel, Russian lapshivik, and Italian lasagna, the sheets of which also belong to pasta, so Austrian Schinkenfleckerln is in good company. Preparing this dish is easier than pronouncing its name: the combination of noodles, ham, and cheese is certainly loaded with calories, but scientists are increasingly leaning towards the idea that fats and carbohydrates can indeed help us cope with stress. Alternatively, you can replace fatty types of ham with, for example, cooked turkey, immediately shedding some calorie weight. Moreover, this casserole takes no longer to prepare than an omelet, fitting perfectly into a morning schedule and allowing you to make use of that stale piece of cheese or leftover pasta from yesterday. When making Schinkenfleckerln, keep in mind that the tastiest part is at the top of the pyramid, where the noodles bake, becoming a little crispy and forming a golden cheesy crust.
