New Year's Stuffing for Poultry with Chestnuts and Dried Apricots

Description
This is a great stuffing for a New Year's duck, chicken, or turkey.
Ingredients
- Water 20 fl oz
- Onion 1 head
- Dried Apricots 10 oz
- Breadcrumbs 10 oz
- Butter 5 oz
- Peeled chestnuts 10 oz
- Parsley 1 bunch
- Ocean salt to taste
- Ground Black Pepper to taste
Step-by-Step Guide
Step 1
In a saucepan, bring water to a boil and add finely chopped onion and finely chopped dried apricots. Cook for 5 minutes, then drain.
Step 2
Melt the butter in a skillet.
Step 3
In a bowl, place the breadcrumbs and pour half of the melted butter over them.
Step 4
In the remaining butter, sauté the chestnuts for a few minutes until golden brown. Transfer to the bowl with breadcrumbs.
Step 5
Add the dried apricots with onion and finely chopped parsley.
Step 6
Season with salt and pepper, and mix well.
