- Horseradish Leaves 0 oz
Step-by-Step Guide
Step 1
Crush, peel, and finely chop the garlic, mash it into a paste, peel and cut the carrot into large pieces, and cut the onion into 4 parts.
Step 2
Rinse the meat. Place the meat in a pot, cover with broth, add the onion and carrot, bring to a boil, and simmer for 120 minutes, skimming off the foam.
Step 3
Add the bay leaves, whole black pepper, salt, and cook for another 30 minutes.
Step 4
Break the gelatin sheets, soak them in cold water for 5 minutes. Remove the carrot, onion, and meat from the pot, strain the broth through a sieve, and add the mashed garlic to the broth.
Step 5
Incorporate the gelatin into the hot broth, stirring until fully dissolved; shred the meat into small pieces; finely chop the dill and parsley, reserving a few parsley leaves for garnish.
Step 6
Place the meat in a mold, sprinkle with herbs, and pour in the broth; let it cool and set in the refrigerator for at least 2 hours.
Step 7
Slice the aspic, garnish with parsley leaves, and serve with horseradish.
