Natural Oysters with Lemon
Appetizers • European
Description
Recipe taken from a book titled 'Seafood. Very Simple'.
Ingredients
- Fresh Oysters 16 pieces
- Lemon 3 pieces
- Ground Black Pepper to taste
Step-by-Step Guide
Step 1
Clean the oysters with a brush under cold running water and dry them.
Step 2
One by one, wipe the oysters with a damp cloth, place them convex side down on your palm, and with a heavy knife, quickly open the shells from the pointed side of the oysters.
Step 3
Be careful not to let any seawater spill out of the opened oyster, as this adds a spicy flavor.
Step 4
Using a kitchen knife, detach the adductor muscle from the edges of the shell.
Step 5
Place the shells with the oysters on a plate.
Step 6
If you don't have a special oyster plate with indentations, you can pour a layer of salt about 1 cm thick on a regular plate and place the oyster shells on it—this way they won't tip over, and not a drop of precious liquid will spill.
Step 7
Oysters are eaten from the shell, but the muscle on the 'hinge' should be detached with a fork.
Step 8
Optionally, you can sprinkle the oysters with lemon juice or season with a small amount of freshly ground pepper.
Step 9
You can also serve a side dish with the oysters: fresh white bread or caraway bread and dry white wine. A seaweed salad is also suitable.
