Description

Cheddar can be substituted with Parmesan.

Ingredients

  • Parsley 1 bunch
  • Olive Oil to taste
  • Brandy 3 tablespoons
  • English Dry Mustard 3 teaspoons
  • 10% cream 10 fl oz
  • Cheshire Cheese ⅓ cup

Step-by-Step Guide

Step 1

Chop the parsley, heat a skillet over high heat, pour in the oil and add the mustard, then pour in the brandy. To evaporate the alcohol faster, you can ignite the brandy, but this is optional.

Step 2

Add most of the parsley and the cream, bring to a boil, remove from heat, and add the cheese while the mixture is still hot, along with the remaining parsley.

Step 3

Drizzle with olive oil and serve immediately with fish or meat.
