
Mushrooms Stuffed with Sweet Pepper, Baked Under Cheese

Ingredients
- Fresh Mushrooms 36 pieces
- Butter 3 tablespoons
- Chopped Green Onions 3 stalks
- Red Long Chili Peppers ¼ piece
- Breadcrumbs 1½ cups
- Fresh basil leaves 2 teaspoons
- Salt ¼ teaspoon
- Ground Black Pepper ¼ teaspoon
- Grated Pecorino Pepato Cheese to taste
Step-by-Step Guide
Step 1
Preheat the oven to 355°F.
Step 2
Wash the mushrooms and carefully remove the stems and the inner part of the mushrooms, leaving the caps intact, by twisting the stems clockwise. Finely chop the mushroom stems; we need only ⅓ cup.
Step 3
Heat 2 tablespoons of butter in a skillet over medium heat. Sauté the chopped mushrooms, onion, and bell pepper for 3 minutes, stirring constantly, until the onion becomes soft. Remove from heat. Mix the sautéed vegetables with the breadcrumbs, chopped oregano, salt, and pepper. Fill each mushroom cap with this mixture.
Step 4
Melt 1 tablespoon of butter in a large oven-safe skillet. Place the mushrooms cap-side down in it. Sprinkle with cheese. Bake for about 15 minutes until the top is golden brown. Serve hot. Bon Appetit!!
