Mushrooms Stuffed with Goat Cheese
Ingredients
- Olive Oil to taste
- Sourdough Bread 3 pieces
- Garlic 1 clove
- Goat cheese 5 oz
- Chopped Sage Leaves ½ cup
- Chili Flakes ¼ teaspoon
- Coarse Salt to taste
- Pickled Chanterelles 20 oz
Step-by-Step Guide
Step 1
Preheat the oven to 390°F. Grease a baking sheet with oil.
Step 2
In a food processor, grind the bread and minced garlic into crumbs. Set aside 0.5 cup. To the remaining crumbs in the processor, add the cheese, parsley, and red pepper flakes. Season with salt and mix again.
Step 3
Remove the stems from the mushroom caps. Fill the caps with the cheese mixture and place them on the baking sheet. Sprinkle with the reserved crumbs and bake in the oven for 15–20 minutes until golden brown.
