Mushrooms on Skewers
Ingredients
- Pickled Chanterelles 20 oz
- Bacon 10 oz
- Olive Oil 7 tablespoons
- Rosemary ½ piece
- Salt to taste
- White Pepper (whole) to taste
Step-by-Step Guide
Step 1
Preheat the grill. Separate the caps from the stems and save the stems for a future soup. Cut the bacon into strips about 1.5 cm wide. Pour the oil into a bowl, add the rosemary leaves, season with salt and pepper, and mix well.
Step 2
Thread the mushroom caps onto skewers alternately with pieces of bacon. Brush the resulting kebabs with the rosemary oil and grill, turning and basting with oil for about 15 minutes, until the mushrooms are soft and cooked through. Serve immediately.
