Mushrooms for Appetizer
Ingredients
- Olive Oil 5 tablespoons
- Onion 1 head
- Garlic 2 cloves
- Carrot 2 pieces
- Dry White Wine 10 fl oz
- Parsley 5 stems
- Bay leaf 0 oz
- Fresh Mushrooms 25 oz
- Tomatoes 2 pieces
- Salt to taste
- Ground Black Pepper to taste
Step-by-Step Guide
Step 1
Heat 3 tablespoons of oil in a pot, add finely chopped onion, sliced carrot, and garlic cloves. Cook, stirring, for 5 minutes. Pour in the wine, add two sprigs of parsley and the bay leaf. Season with salt and pepper and cook for another 5 minutes. Then add the mushroom caps and finely chopped tomatoes and cook for another 5 minutes.
Step 2
Remove the parsley, bay leaf, and garlic. Transfer the mushrooms to a serving dish, drizzle with the remaining oil, and sprinkle with the remaining parsley, which should be finely chopped. Mix well and refrigerate.
