Ingredients
- Chicken Egg 5 pieces
- Whole egg 1 piece
- Dijon Mustard 1 teaspoon
- Meyer Lemon Juice 1 tablespoon
- Tarragon 1 teaspoon
- Vegetable Oil 15 fl oz
- Parsley 0 oz
- Chervil 0 oz
- Capers 0.5 tablespoons
- Cornichons 0 oz
Step-by-Step Guide
Step 1
Boil the eggs hard, cool, and peel. Remove the yolks and keep 3 egg whites. Mash the boiled yolks with 1 raw egg and a teaspoon of Dijon mustard until smooth. Add lemon juice and vegetable oil as you would when making regular mayonnaise. Stir in 1 tablespoon of a mixture of chopped tarragon, parsley, and chervil, along with a tablespoon of chopped capers and cornichons. Mix well and add finely chopped egg whites from three eggs.
