  • Morels 20 oz
  • Shallot 5 oz
  • Butter 5 oz
  • 33% Cream 5 fl oz
  • Dry White Wine 5 fl oz
  • Salt to taste

Step 1

Prepare all the ingredients.

Slice the mushrooms.

Step 3

Chop the shallots into thin strips.

Step 4

In a skillet, heat the butter over low heat and sauté the shallots until translucent.

Add the mushrooms and pour in the white wine.

Reduce the wine and continue to sauté the mushrooms until soft.

Transfer the mushrooms to a blender, add the cream, and blend until smooth. Season with salt to taste.

Pass the mixture through a sieve to achieve a finer texture.
