  • Fresh Mint 4 stems
  • Ciabatta 6 pieces

Step-by-Step Guide

Step 1

Slice the eggplant into rings about 0.5 cm thick and fry on both sides in olive oil until soft and golden brown. Pat dry with a kitchen towel.

Step 2

Cut the bread in half lengthwise and optionally toast it on a grill pan. This is especially necessary if you are using a baguette or ciabatta to create a crust that makes it easier to spread the cheese.

Step 3

Spread the cheese in a thin layer.

Step 4

Top with mint leaves and pieces of eggplant.
