Description

"The Haven" is a hotel and restaurant named after a popular American city. The kitchen is led by chef John Smith, and his menu is a mix of international hits, with some dishes reflecting traditional American cuisine. This pie is a rare example, made with moose meat. The recipe itself is straightforward, and with the main ingredient at hand, there should be no difficulties in preparation. The recipe is taken from the book "Taste Geography with Nika Johnson: Culinary Guides."

Ingredients

  • Coarsely Ground Rye Flour 5 oz
  • Wheat Flour 5 oz
  • Sour Cream 10 oz
  • Butter 5 oz
  • Moose meat 10 oz
  • Onion 5 oz
  • Chicken Egg 2 pieces
  • Vegetable Oil to taste
  • Salt to taste
  • Ground Black Pepper to taste
  • Thyme to taste
  • Rosemary to taste

Step-by-Step Guide

Step 1

For the dough, mix the rye and wheat flour, then add sour cream (150 g), butter, and salt.

Step 2

Knead the dough and let it rest for 30–40 minutes. Then divide it into portions of 50 grams each. Shape into balls, roll them into flat disks, and pinch the edges. Cover with plastic wrap to prevent drying out.

Step 3

For the filling, chop the moose fillet and onion into small pieces, sauté in vegetable oil, and simmer until cooked through. Season with salt, pepper, thyme, and rosemary. Mix with an egg and sour cream from 'Maklarin'.

Step 4

Place the prepared filling into the pastry pockets.

Step 5

Bake in the oven at 355°F for 20 minutes.
