  • Sugar 1 tablespoon
  • Lemon ½ pieces

Step-by-Step Guide

Step 1

In a saucepan, heat the butter with the sugar. If you are using frozen green peas, you can do without water; if using fresh peas, add just a little, about 50 ml of water.

Step 2

Bring the water with butter and sugar to a boil, add the green peas, reduce the heat, and simmer—fresh peas for about a minute, and frozen peas until they are thawed.

Step 3

Season the peas with finely chopped mint, the juice of half a lemon, salt, and freshly ground pepper. Remove from heat, transfer to a blender, and blend until it reaches a thick puree while still retaining some texture from the peas.

Step 4

You can also use this puree as a sauce by blending it to a smooth, soupy consistency, adding a bit of chicken broth, and straining it through a fine sieve to achieve a delicate and sweet sauce, reminiscent of freshly sprouted peas.
