Mexican Lasagna with Zucchini
Ingredients
- Olive Oil 2 tablespoons
- Onion 5 oz
- Courgette 3 pieces
- Minced garlic 2 teaspoons
- Salt to taste
- Ground Black Pepper to taste
- Tortillas 8 pieces
- Ground Cumin ¾ teaspoon
- Cheshire Cheese 15 oz
- Spiced Tomato Juice 15 oz
- Ground coriander ½ teaspoon
Step-by-Step Guide
Step 1
Preheat the oven to 355°F.
Step 2
Heat the olive oil in a deep skillet and add the chopped onion. Sauté until soft for 3-4 minutes. Then add the minced garlic, grated zucchini, salt, and pepper. Cook for another 5 minutes. Remove from heat.
Step 3
Tear the tortillas into medium pieces and place them in a greased baking dish. Sprinkle half of the cheese and top with the zucchini mixture.
Step 4
In a blender, puree the tomatoes, cumin, and coriander until smooth. Pour over the zucchini. Sprinkle with the remaining cheese and bake for 20-25 minutes.
