Mediterranean Sandwich

Ingredients

  • Bun 1 piece
  • Tomatoes 1 piece
  • Courgette 1 piece
  • Champignons 4 pieces
  • Eggplants 1 piece
  • Olives stuffed with lemon 4 pieces
  • Melted Cheese 5 oz
  • Mayonnaise 2 spoons
  • Yogurt powder 1 tablespoon
  • Olive Oil 3 spoons
  • Thyme to taste
  • Salt to taste
  • Ground Black Pepper to taste

Step-by-Step Guide

Step 1

Slice the tomato, zucchini, eggplant, and mushrooms into rounds and drizzle with two tablespoons of olive oil. (You can add a little thyme and let it marinate for about ten to fifteen minutes.) Grill everything or sauté in a very hot skillet. Allow to cool and refrigerate for half an hour.

Step 2

Slice the mozzarella into thick pieces and chop the olives into small pieces.

Step 3

Mix the mayonnaise with the yogurt, then season with salt and pepper.

Step 4

Slice the rosemary roll (or any other long roll, depending on your preference) in half lengthwise and toast it in olive oil until it becomes crispy.

Step 5

Spread mayonnaise sauce on the inner sides of the bun halves. On one half, layer eggplant, zucchini, tomato, mushrooms, olives, and mozzarella. Place the other half on top, press down, and secure with four skewers. Before serving, cut into four pieces.
