Meatloaf with Mushrooms and Sherry

Ingredients

  • Olive Oil 3 tablespoons
  • Onion 2 heads
  • Garlic 2 cloves
  • Lean Beef 50 oz
  • Ketchup 5 tablespoons
  • Fresh Mushrooms 1½ cups
  • Medium-dry sherry ½ cup
  • Chicken Egg 1 piece
  • Cake crumbs 1 cup
  • Salt to taste
  • Ground Black Pepper to taste

Step-by-Step Guide

Step 1

Boil the mushrooms in boiling water until soft. Drain and cool.

Step 2

Heat the olive oil in a skillet over low heat. Add the finely chopped onion and minced garlic and sauté until translucent, about 15 minutes. Cool.

Step 3

Preheat the oven to 355°F.

Step 4

In a large bowl, mix the ground beef, 2 tablespoons of ketchup, sherry, chopped mushrooms, egg, breadcrumbs, salt, and pepper. Add half of the garlic-onion mixture and mix well.

Step 5

Place the meat mixture in a loaf pan, top with the remaining garlic-onion mixture, and drizzle with the remaining ketchup. Bake for 45 minutes until cooked through.

Step 6

Remove from the oven and let sit for 10 minutes. Slice and serve.
