
Meat Pancakes

Description
In this recipe, pork is used as the meat component, but you are free to substitute it with beef, veal, or lamb.
Ingredients
- Pork Blood 20 oz
- Chicken Egg 4 pieces
- Sugar 1 tablespoon
- Wheat Flour 15 oz
- Milk 0 qt
- Onion 3 heads
- Parsley 0 oz
- Vegetable Oil 0 fl oz
- Ground Black Pepper to taste
- Salt to taste
Step-by-Step Guide
Step 1
Cut the meat into large pieces, then immerse it in boiling water and cook for one hour.
Step 2
While the meat is cooking, prepare the pancakes: beat the eggs with sugar, add the sifted flour and a pinch of salt, and mix well. Gradually pour in the milk and knead until you have a smooth batter. Refrigerate for 20 minutes.
Step 3
Preheat a pancake skillet well, brush it with vegetable oil, pour a ladle of pancake batter onto it, and spread it evenly across the surface of the skillet. Cook for 2 minutes, then flip and cook for another 1-2 minutes. Repeat this process with the remaining batter.
Step 4
Chop the onion into small cubes and sauté it in vegetable oil until golden brown.
Step 5
Allow the boiled meat to cool slightly, then grind it together with the sautéed onions.
Step 6
Add the chopped parsley, salt, and pepper to the minced meat to taste.
Step 7
Place a small amount of filling on the edge of the pancake, fold in the sides, and roll it up into a tube.
