Meat and Cheese Roll-Ups
Ingredients
- Onion 1 head
- Vegetable Oil 3 tablespoons
- Garlic 1 clove
- Lean Beef 10 oz
- Fajitas sauce 1 cup
- Mild Chili Spice 2 teaspoons
- Salt ½ teaspoon
- Ground Black Pepper ¼ teaspoon
- Tortillas 10 pieces
- Sour Cream to taste
- Cheshire Cheese ½ cup
Step-by-Step Guide
Step 1
Preheat the oven to 390°F.
Step 2
Heat 1 tablespoon of vegetable oil in a skillet over medium heat. Add finely chopped onion and minced garlic and sauté for 3 minutes until soft. Add the ground beef and, using a wooden spoon to break up lumps, cook for 3 minutes. Add 0.5 cup of salsa, chili, salt, and pepper. Reduce to low heat and cook, stirring, for 10 minutes.
Step 3
Lay the tortillas on the table and cover with a damp towel. Warm them in the microwave until heated through.
Step 4
Place a bit of the meat mixture on each tortilla and spread it over the surface, leaving the edges clean. Sprinkle with cheese and roll into a tube. Place on a baking sheet lined with foil and brush with vegetable oil. Bake in the oven for 8-10 minutes until the filling is heated through and the tortilla is slightly browned. Serve with sour cream and salsa.
