Mayonnaise with Thistle Oil
Ingredients
- Chicken Egg 1 piece
- Quail Egg 1 piece
- Thistle Oil 0 fl oz
- Unrefined Sunflower Oil 5 fl oz
- Meyer Lemon Juice 1 tablespoon
- Mustard Greens 1 tablespoon
- Salt ½ teaspoon
- Ground Black Pepper a pinch
Step-by-Step Guide
Step 1
Prepare the ingredients. They should all be at room temperature.
Step 2
Carefully crack the eggs into a deep container without damaging the yolks.
Step 3
Add the mustard.
Step 4
Add the black pepper.
Step 5
Add salt.
Step 6
Add the lemon juice.
Step 7
Pour in the thistle oil.
Step 8
Then add the olive oil.
Step 9
Carefully lower the immersion blender so that the yolks are underneath it. Blend without moving the handle until a white emulsion rises to the top.
Step 10
Then blend until a uniform consistency is achieved, moving the blender up and down.
Step 11
Transfer to a convenient container and store in the refrigerator for up to 5 days.
