Description

Onion mayonnaise and pepper sauce pair perfectly in burgers, tartares, and burritos, but there's no need to mix them in the same container.

Ingredients

  • Quail Egg 8 pieces
  • Mustard Greens 0 oz
  • Meyer Lemon Juice 0 fl oz
  • White Balsamic Cream 0 fl oz
  • Vegetable Oil 15 fl oz
  • Mild Chili Spice 10 oz
  • Salt 0 oz
  • Soy Sauce 0 fl oz
  • Scallions 5 oz
  • Lime Juice 0 fl oz

Step-by-Step Guide

Step 1

Blend quail eggs, mustard, lemon juice, 5 ml of white balsamic vinegar, and 500 ml of vegetable oil in a blender.

Step 2

Prepare a sauce from roasted peppers. Roast the peppers until well done, then pass them through a sieve and mix in salt, 10 ml of balsamic vinegar, and 5 ml of soy sauce.

Step 3

Prepare the sauce from fried onions. Pour 15 ml of vegetable oil over the onions, season with salt, char, and grill them. Chop finely with a knife. In a blender cup, add 25 ml of soy sauce, lime juice, and the charred onions. Blend until smooth. Strain through a fine sieve and mix with mayonnaise.
