Description
For one liter of milk, you need 2 tablespoons of starter culture. If you don't have matsuni, you can use Activia without additives. It contains the same starter culture as matsuni. Do not use kefir or buttermilk as a starter culture: the lactic acid bacteria are completely different. You can store it in the refrigerator afterward.

- Matsuni 2 tablespoons
- Milk 0 qt
Step-by-Step Guide
Step 1
Heat the milk, but do not boil it.
Step 2
Add the starter culture to the hot milk.
Step 3
Stir well.
Step 4
Place in a warm spot for 24 hours (wrap it in a blanket, a warm coat, or a fur coat...).
