Marinated Wild Garlic with Chili Pepper
Ingredients
- Wild Garlic 10 oz
- Dried Red Pepper 2 pieces
- Fennel Seeds 2 teaspoons
- Black peppercorns 1 teaspoon
- Wine Vinegar 10 fl oz
- Sugar 5 oz
- Coarse Salt 1 tablespoon
- Bay leaves 2 pieces
Step-by-Step Guide
Step 1
Separate the leaves from the stalks of the wild garlic, saving them for another dish, such as pesto!
Step 2
Place the stalks with bulbs in a liter jar, add the chili pepper, bay leaves, fennel seeds, and black pepper.
Step 3
In a medium saucepan, bring the vinegar, sugar, salt, and 240 ml of water to a boil. Stir the mixture to dissolve the sugar and salt.
Step 4
Pour the marinade into the jar so that it completely covers the wild garlic. Close the lid. Allow to cool, then place in the refrigerator.
